Quinoa and black bean salad is a healthy and flavorful meal that is perfect for a summer picnic or BBQ. Here is a simple recipe for quinoa and black bean salad:



Ingredients:


  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper, to taste

Instructions:


  1. Rinse the quinoa in a fine-mesh sieve. Transfer the quinoa to a medium saucepan and add the water. Bring the mixture to a boil, then reduce the heat to low and simmer, covered, until the quinoa is tender and the water is absorbed, about 15-20 minutes. Remove from heat and let the quinoa sit, covered, for 5 minutes. Fluff the quinoa with a fork and transfer it to a large bowl.

  2. Add the black beans, cherry tomatoes, corn, red onion, and cilantro to the bowl with the quinoa.

  3. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper. Pour the dressing over the quinoa and bean mixture and toss to combine.

  4. Serve the quinoa and black bean salad immediately, or refrigerate it until ready to serve. Enjoy!
