Ingredients:
1 cup quinoa
2 cups water
1 can black beans, drained and rinsed
1 cup cherry tomatoes, halved
1 cup corn kernels (fresh or frozen)
1/2 cup chopped red onion
1/4 cup chopped fresh cilantro
2 tablespoons olive oil
1 tablespoon red wine vinegar
Salt and pepper, to taste
Instructions:
Rinse the quinoa in a fine-mesh sieve. Transfer the quinoa to a medium saucepan and add the water. Bring the mixture to a boil, then reduce the heat to low and simmer, covered, until the quinoa is tender and the water is absorbed, about 15-20 minutes. Remove from heat and let the quinoa sit, covered, for 5 minutes. Fluff the quinoa with a fork and transfer it to a large bowl.
Add the black beans, cherry tomatoes, corn, red onion, and cilantro to the bowl with the quinoa.
