Puran poli is a sweet, flatbread dessert that is popular in Maharashtra, Gujarat, and other parts of India. It is made with a filling of cooked chana dal (split Bengal gram) that is sweetened with jaggery or sugar and flavored with cardamom, nutmeg, and other spices. The filling is wrapped in a wheat flour dough and then rolled out and cooked on a griddle until it is golden brown. Here is a recipe for puran poli:
Ingredients
- 1 cup chana dal (split Bengal gram)
- 1 cup jaggery or sugar
- 1 tsp cardamom powder
- 1/4 tsp nutmeg powder
- A pinch of salt
- 2 cups wheat flour
- 1/2 cup ghee or oil, for frying
Instructions
- Rinse the chana dal and soak it in water for at least 2 hours.
- Drain the water and transfer the chana dal to a pressure cooker. Add enough water to cover the dal and cook until it is soft and easily mashed. This should take about 3-4 whistles.
- Drain any excess water from the cooked dal and transfer it to a heavy-bottomed pan. Add the jaggery or sugar, cardamom powder, nutmeg powder, and salt. Cook over medium heat, stirring constantly, until the jaggery has melted and the mixture thickens and comes together in a ball. Remove from heat and set aside to cool.
- In a large bowl, mix together the wheat flour and enough water to make a soft, pliable dough. Cover the dough with a damp cloth and set aside for 20-30 minutes.
- Divide the dough into equal-sized balls. Take one ball and roll it out into a small circle. Place a spoonful of the filling in the center of the circle. Fold the edges of the dough over the filling to enclose it and form a ball.
- Roll out the ball into a thin circle, about 6 inches in diameter.
- Heat a griddle or large pan over medium heat. Place the puran poli on the griddle and cook until the bottom is golden brown. Flip the puran poli and cook the other side until it is also golden brown.
- Brush the puran poli with ghee or oil and cook for a few more seconds on each side. Repeat with the remaining dough and filling.
- Serve the puran poli warm or at room temperature. It can be served as a dessert or a snack. Enjoy!
